1/4 c. butter
1 med. onion, pureed
2 lg. cloves garlic
1/6 c. flour
2 c. heavy cream
5 oz. spinach, chopped
2 chicken bouillon cubes
1/4 c. water
1 pt. oysters
salt and white pepper

Directions:
Directions:
Melt 1/2 butter in large pot. Saute onion and garlic. Add oysters and saute until curled edges. Melt remaining butter and stir in flour to make roux. Stir until smooth. Add roux to onions and oysters when mixture begins to boil. Reduce heat. Dissolve bouillon cubes in water. Add cream, spinach and chicken base. Cook until the spinach is done, stirring constantly. Do not boil. Add salt and pepper.
