Crust:
1 - 1 1/4 c. flour
1/4 c. powdered sugar
1/2 c. margarine

Topping:
8 oz. cream cheese
1 tsp. lemon juice
1/4 c. sugar

Glaze:
1/2 c. orange juice
dash of salt
1/2 c. sugar
1/2 c. water
1 tsp. lemon juice
2 T. cornstarch

Fruit: Berries, slices of banana, and kiwi work best, but you can try any of your favorites!

Directions:
Preheat oven to 325º. Combine "Crust" ingredients and press into a greased 12 inch pizza pan. Bake for 12 minutes until light brown. Cool.
While crust is baking, combine "Topping" ingredients and beat until smooth. Spread on a COOLED crust and top with fresh fruit in desired pattern. It is fun to make a ring of sliced strawberries around the outside, then a smaller ring of sliced bananas, then an even smaller ring of blueberries. Repeat pattern for a 4th of July (red, white, and blue) fruit pizza. Have fun and be creative! Once you have covered the topping with fresh fruit, cook all the "Glaze" ingredients in a saucepan on the stove until thick, stirring continuously. Cool the glaze just a bit (but do not let it get too thick) and pour over all fruit. Refrigerate. Enjoy!!

Fruit pizza is best if made the day it will be served. Otherwise, the crust will become soggy. This is the perfect spring/summer dessert for bridal/baby showers, birthdays, and holidays. Bring copies of the recipe to share because you will be asked for it!
