1 1/2 cup cornbread mix
3/4 cup milk
1 egg
1/2 green onion, chopped
1/2 cup creamed corn
1/4 cup Jalapeno pepper, chopped
3/4 cup grated cheese (Cheddar, Monterey Jack, or both)
1 tbsp. sugar
1 tbsp. oil
1 Garlic clove, chopped (optional)

Combine all ingredients and mix well. Pour into greased baking dish and bake at 425 degrees for about 25 minutes or until done.
