1/2 lb. egg noodles
1/2 C. frozen peas (if desired)
1 12 oz can tuna or 1 lb. ground beef
2 eggs
1/2 C. sour cream
1/2 c. Parmesan cheese (if desired)
1/2 C. ea. shredded cheese and breadcrumbs for the top
1/4 tsp ea, salt and pepper

Preheat oven to 350 F. Boil noodles (and frozen vegetables if desired) in salted water for 13 mins. Add the cooked pasta and vegetable mixture to a 2 qt. casserole dish that has been sprayed with Pam or other non-stick cooking spray. Then add the tuna or beef according to taste or dietary restrictions. Finally, in a separate mixing bowl, mix together the sour cream, eggs, Parmesan cheese (if desired) Add the sauce mixture to the casserole with the other ingredients and mix well. Add breadcumbs and additional cheeses to the top. Bake for 45 mins. and serve.

The original recipe, out of the Fannie Farmer Cookbook was made with ham, but I have also substituted ground beef and tuna, and both work very well. By the same token, I have tried substituting other types of pastas for egg noodles, and have not been happy with the result. Finally, depending on personal taste, you can include the Parmesan cheese in the sauce, or leave it out. For a more balanced meal frozen peas or other frozen vegetables can be cooked with the pasta.
