4 T. plus 1/2 c olive oil
1 c buttermilk
1 1/2 lbs. chicken tenders (I use chicken breasts if I don't have tenders)
3 large clove garlic, minced
1/2 tsp. salt
3 T. balsamic vinegar
1 1/4 c grated Parmesan
3/4 c Italian-style seasoned bread crumbs

Brush 1 T. oil over each of two baking sheets lined with foil. Place the buttermilk in a large bowl. Add the chicken and stir to coat. Let stand at least 15 minutes and up to 30.

Mash garlic with the salt in a medium bowl. Whisk in the vinegar and then the remaining 1/2 cup of oil. Season with salt and pepper.

Stir in the Parmesan cheese and bread crumbs in a pie pan. Remove chicken from buttermilk and dredge in them in the bread crumb mixture to coat, pressing to adhere. Arrange on baking sheets. Drizzle the remaining 2 T. oil over the chicken and bake in a 500 degree oven for about 12 minutes.

Serve with vinaigrette for dipping.
