1 lb lean ground turkey
1 lb sausage roll
1/4 c. saltine crumbs or seasoned Italian breadcrumbs if you have them
1 egg
1/4 C. milk
1 C. (approx.)shredded cheese
salt, pepper, chili powder, minced garlic
1/2 C. (approx.) grated Parmesan cheese

Preheat oven to 350 F. In a large mixing bowl, combine the two meats, crushed saltines or breadcrumbs, spices, cheeses, and milk. Bake the .meatloaf for 1 hour 10 mins.

This recipe is just what it implies. I came up with it because I had to put a meal together quickly after a tough afternoon, with just what I could dig out of the pantry. I used saltines because I was out of breadcrumbs, but if you find saltines too hard to work with, you can substitute any flavored breadcrumbs you prefer. The same goes for the cheeses and the spices. I used Mexican blend shredded cheese, but feel free to substitute any flavor combination you like depending on taste. You can include the Parmesan cheese or leave it out as you like. If you find the meat mix is too moist, you can adjust the quantity of the cheeses. The recipie makes one large and one small meatloaf.
