2 egg whites
1 T. vanilla
1 lb. pecan halves (4 cups)
1/2 cup white sugar
1/2 cup brown sugar
3/4 tsp. salt
1 tsp. ground cinnamon

Directions:
Directions:
Preheat oven to 225 degrees
Cover a baking sheet with aluminum foil
Whisk together the egg whites & vanilla until frothy
In a separate bowl, mix together the sugars, salt, & cinnamon & mix well
Add the pecans to the egg white mixture & stir until they are well coated
Add the sugar mixture & stir until they are evenly coated
Spread the nuts on the aluminum foil baking sheet

Bake for 45 minutes to 1 hour, turning every 15 minutes
