8 cups unbleached all-purpose flour
6 Tbsp. plus 2 Tsp. baking powder
3/4 cup sugar
2 Tbsp. plus 2 Tsp. salt

To make pancake mix:

Combine all the ingredients in a large bowl. Mix well. Transfer to a large-mouthed sealable jar or a large resealable plastic bag. May be stored in the pantry for up to 6 months.

To make pancakes: Place 2 1/3 cups pancake mix in a large bowl. In another bowl, whisk together 2 eggs, 1 3/4 cups milk, and 4 tablespoons unsalted butter (melted and cooled). Let the batter rest for 5 minutes.
Place a nonstick griddle or skillet coated with oil, butter, or cooking spray over medium heat. Spoon 1/3 cup of batter per pancake onto the griddle. Turn when bubbles rise to the surface and the edges look cooked. Repeat with the remaining batter. Serve with topping. Makes 16 to 20 pancakes.
