3/4 cup cornmeal
1 1/4 Milk
1 cup all purpose flour
1/3 cup sugar
1 tbsp Baking powder
1/2 tsp Salt
1 Egg
1/4 Vegetable oil

Directions:
Directions:
Combine cornmeal and milk. Let stand 10 minutes. Combine flour, sugar, baking powder, and salt in a large bowl. Add egg and oil to cornmeal mixture. Mix well. Add to dry ingredients, stirring just until combined. Fill greased muffin cups 2/3 full. Bake at 400F for 15 to 20 minutes.

Double this recipe, bake in a 9 X 13 cake pan, and you will have a delicious moist cornbread! I often omit the sugar completely for a more savoury bread. You can add chopped jalapeņo peppers to make a spicy variety too.
