5 large ears of corn
2 red bell peppers
6-8 large beefsteak or garden tomatoes
1/4 c olive oil
4 T fresh lime juice
1 tsp grated lime zest
2 garlic cloves, pressed
3 T chopped shallot (can be omitted if desired)
4-5 T chopped fresh cilantro
2 tsp chopped jalapeņo chili
4 oz goat cheese

Cut extra silk off top of corn, and any part of husk that is hanging. Soak in water for 1/2 hour. Grill, turning periodically, for 15 minutes. Grill bell peppers directly on heat until they are blackened. Enclose peppers in a paper bag for 10 minutes. Peel, seed, and chop peppers. Peel corn and shave from cob. Cut tomato tops off, crosswise.
Using a melon baller, scoop out center of tomatoes, leaving shell. Sprinkle inside of tomato shells with salt, place face down on paper towels to drain for 30 minutes.
Drain tomato solids, discard seeds, and add remaining tomato pulp to corn and peppers.
Whisk oil, lime juice, zest, and garlic in bowl to blend.
Add to corn mixture. Mix in shallot, cilantro, jalapeņo. Season with salt and pepper. Add goat cheese right before filling. Spoon corn salad into tomato shells.

My newest, most favorite recipe...so good you will want to make it every week. You can substitute whatever you want - the essentials are really the tomatoes, corn (can be canned, I guess), cilantro, lime, goat cheese. So worth the extra prep effort - it can be made in advance, too!! This recipe can even stand alone as a vegetarian meal, it is that good and hearty!
