2 eggs
3-4 T. milk (funny, I never do!)
1 t.salt
2 c. flour (add a little at a time until stiff, you can figure 1 cup of flour to 1 egg)

Mix ingredients and divide into 2 balls. Roll very thin on a floured surface. Flour the surface of the rolled out dough and then roll up into a log. Slice very thin and shake out noodles as you cut them. I usually transfer them to a cookie sheet and spread them out to dry.
Mom always just cooked them in enough broth for a thicker chicken and noodles as a side dish. I also make chicken noodle soup adding celery, shredded carrots and onion. Season with salt and pepper and for the soup, I add basil and Mrs. Dash.

This reminds me of the days when we would butcher chickens. It was always a busy day with Grandma and Aunt Ruby coming to help. Mom would step on the head and pull. Off came the head but the chicken kept going, jumping around the yard until it finally stopped! It was then dunked into a tub of boiling hot water and how amazing, that the feathers would come right off with a rub of the skin. Next came the removal of the innards! We always got to look at the gizzard to see what the chicken had eaten! I can still remember the smell of both that and the feathers. UGH, boy what kids miss out on these days!
