2 tbsp. sesame seeds
3 tbsp. vegetable oil
2 pork tenderloins (1 1/2 - 2 lb. total)
salt & pepper
1/2 c. honey
1/2 c. plus 2 tbsp. cider vinegar
1 cucumber, peeled, halved lengthwise, seeded, & sliced thin
1 jalapeño chile, seeded & sliced thin
8 scallions, sliced thin on bias

Toast sesame seeds in large nonstick skillet over medium-high heat until golden, about 3 minutes. Transfer sesame seeds to small bowl. Heat 1 tbsp. oil in empty skillet over medium-high heat until just smoking. Pat pork dry with paper towels & season with salt & pepper. Cook tenderloins until browned on all sides, 5-8 minutes. Reduce heat to medium, add honey & 1/2 c. vinegar, & cook, turning tenderloins to coat, until mixture is syrupy & instant-read thermometer inserted in center of tenderloin registers 145º, about 10 minutes. Transfer pork to cutting board, tent with foil, & let rest 5 minutes. Set skillet with honey mixture aside. Combine cucumber, jalapeño, scallions, remaining 2 tbsp. oil, remaining 2 tbsp. vinegar & 2 tbsp. sesame seeds in bowl. Adjust seasoning with salt & pepper. Cut pork into 1/2 in. thick slices, transfer to platter, drizzle with reserved honey mixture & sprinkle with remaining sesame seeds. Serve with scallion salad.

Make 4-6 servings. To ensure even cooking, use tenderloins that weigh between 12 & 16 oz. each. For an extra kick, don't seed the chile.
