3 lg yellow squash
lb. hot bulk sausage
3 cloves garlic, chopped
cup green pepper, chopped
cup orange pepper, chopped
cup onion, chopped
1 medium roma tomato, chopped
cup grated Parmesan cheese
cup mozzarella cheese, shredded

Directions:
Directions:
Cut squash in half lengthwise and remove seeds. Cook squash with 4 tablespoons water in microwave on high for 7 minutes. Cool with cut side down to drain any liquid from the squash. Brown sausage, garlic, onion, green pepper, and orange pepper. Drain. Add tomato and Parmesan cheese. Stir until well blended.
Spoon mixture evenly into squash; place squash in a greased 9x13 pan, cover and bake for 30 minutes at 350. Then uncover, top with mozzarella cheese and bake for another 20 to 25 minutes or until the cheese is melted and bubbling.
