1 lb. hot or mild Italian sausage links
1 large yellow onion
extra virgin olive oil
1 tsp. oregano
2 (15 oz.) cans diced tomatoes w/ garlic, basil, oregano
2 c. gemelli pasta

Directions:
Directions:
In a large skillet, add 2-3 Tbsp. olive oil. Remove casings from sausage and crumble sausage in hot pan. Peel and slice onions and add to skillet when sausage is about halfway done. When sausage; onion mixture is done, add tomatoes and oregano and simmer for 10-20 minutes. Boil gemelli pasta in salted water until done. Drain, then add pasta to meat mixture. Toss to coat and serve immediately. Serve with salad and garlic bread.
