2 1/2 c. fresh broccoli or 1 (10 oz) pkg. frozen chopped broccoli
1/2 c. onions, chopped
3 Tbsp. butter
3 Tbsp. flour
1 (14 1/2 oz.) can chicken broth
1 c. milk
1 c. cheddar cheese, shredded
Dash of pepper

Directions:
Directions:
Cook broccoli till almost done. In large saucepan, cook and stir onions in butter about 2 minutes. Stir in flour. Add broth, milk and broccoli. Heat and stir until mixture comes to a boil. Cook and stir for about 5 minutes. Puree in blender or food processor; return to pan. Add cheese and pepper. Heat and stir until cheese melts.

This is a rich soup. We almost prefer asparagus to broccoli.
