Ingredients:  
one pie crust, preferably made with part whole wheat;
one small pkg. chopped frozen spinach or 2 qt. fresh;
1 T. olive oil;
1 onion, chopped;
1/4 tsp. nutmeg;
1/2 tsp. oregano;
1/2 tsp. salt;
2 beaten eggs;
1 c. grated Swiss cheese

Directions:
Cook and drain spinach (or simply defrost). Saute onion in oil and add seasonings. Blend with egg and cheese and pour into pie shell. It will be fairly shallow. Bake at 350 for 30 minutes or until set and just starting to brown. Serve warm or cold.
