4 large sweet potatoes
1 cup pecan pieces
1 cup corn flakes, crushed (plus extra for rolling)
1 tbsp. flour
1/4 cup sugar
2 tbsp. milk
1 tsp. ground cinnamon
1 tsp. vanilla
1 1/2 tbsp. Bourbon (to taste, optional)
1/4 tsp. baking powder
Large marshmallows, halved
1/4 lb. butter

Peel, slice and boil potatoes until done. Drain well and mash until smooth. Add remaining ingredients except marshmallows and butter and mix well. Chill for easier handling. Mold sweet potatoes around marshmallow halves; shape each into a ball or cake and roll in additional crushed corn flakes. Bake at 350º for 30 minutes. During last 5 minutes of baking, place a cherry in center of each cake.

This was a regular Christmas dish for 35 years. The first time I removed it from the Christmas menu (because the children never ate it), my daughter Nancy questioned why. When I explained that they never ate it, she said, "But we're supposed to have sweet potatoes at Christmas! Everyone else loves them and they're pretty!"
