1 clove garlic, pressed
1/2 cup olive oil
1/2 tsp. salt
Pepper (to taste)
1 large lemon, juiced
2 eggs, coddled 1 - 1 1/2 minutes
2 - 3 heads Romaine lettuce, torn in pieces
Whole Romaine leaves (for garnish)
6 anchovy fillets, mashed or chopped
1/2 cup fresh Parmesan cheese, grated
2 cups croutons (optional)

Marinate garlic in olive oil for a few hours or overnight.

In a large bowl, combine the salt, pepper and lemon juice. Slowly pour in the olive oil while whipping to slightly thicken. When the oil begins to turn cloudy, break in the coddled eggs (coddle by submerging whole egg in boiling water, remove from heat, then let stand one minute) and continue whipping. Drop in lettuce pieces and toss until completely coated. Add anchovies and cheese and adjust to taste with additional salt and lemon juice, if needed. Add croutons if using. Serve on whole romaine leaves.

Once upon a time, we sprinkled squeezed lemon juice over the top of the egg which supposedly "cooked" it. No more! It would either kill us or get us arrested for endangerment!
