1 medium eggplant
2 eggs
2 tbsp. Parmesan
1 1/2 cup bread crumbs
Oil for frying
3/4 lb shredded mozzarella cheese
Favorite spaghetti sauce

Directions:
Directions:
Slice eggplant lengthwise into 1/2 inch slices. Sprinkle with salt and let sit for 1/2 hour. Rinse and pat eggplant dry.

Mix egg and Parmesan cheese. Dip eggplant in egg mix, then dredge in breadcrumbs. Fry eggplant slices in hot oil. Drain on paper towels.

Layer bottom of 9 x 13 greased pan with fried eggplant slices. Layer with sauce and mozzarella cheese. Repeat. Top layer should be mozzarella cheese.

Bake at 350º for 30-45 minutes until heated through and cheese is browned and bubbly.
