Thick White Sauce:
4 tbsp. butter
4 tbsp. flour
1 cup milk
1/4 tsp dried mustard
salt & pepper

1 cup shredded cheddar cheese
3 egg yolks, well beaten
3 egg whites
1/4 tsp cream of tarter

Directions:
Directions:
Prepare thick white sauce by melting butter and adding flour to form a roux. Whisk in milk; add mustard, salt & pepper. Stir cheese into hot white sauce. Remove from heat. Stir in beaten egg yolks.

Beat egg whites with cream of tarter until stiff. Fold egg whites into above mix. Pour into greased 1 1/2 quart casserole dish.

Place casserole in pan of water with 1 inch of water. Bake at 350º for 50-60 minutes until puffed and golden brown. Serve immediately.
