1/2 c. fine grained bulgur wheat
1/2 tsp. coarse salt
3/4 c. boiling water
2 tbsp. fresh lemon juice
1 tbsp. olive oil
coarse salt & ground pepper
2 tbsp. scallions, minced
3/4 c. seedless grapes, halved
1/2 c. toasted walnuts, chopped
1/2 c. feta cheese, crumbled

Directions:
Directions:
In a medium bowl, combine wheat, coarse salt, & boiling water. Cover, let stand until wheat is tender, about 30 minutes. In a large bowl, whisk together lemon juice & olive oil, season with coarse salt & ground pepper. Add scallions, seedless grapes, walnuts & feta. Add wheat, toss.
