1 whole chicken
2 quarts water
6 T.milk
1 can chicken broth
2 c. flour
salt and pepper

Directions:
Directions:
Place whole chicken in large pot and cover with water. Bring to a boil, reduce heat and simmer for 1 hour. Remove chicken from pot, reserving broth. Remove skin and bones from chicken, and discard. Set aside chicken.
To prepare dumplings: combine 3 beaten eggs with 3 T. milk and a little chicken broth. Stir. Mix in flour. Dough should be sticky. Roll out dough on floured surface and cut into strips.
Add a little milk, salt and pepper to reserved broth and bring to boil. (If not enough broth, add a can of chicken broth.) Add dumplings to boiling broth one at a time. Cover, reduce heat so broth is just simmering. Cook gently for an hour. When dumplings are fluffy, add chicken. When chicken has heated, serve.

This recipe was handed down by Ada (Mrs. Collie)Baker to her 21 grandchildren. Mr. and Mrs. Baker married in 1910 and settled in the community of Choate, Karnes County, to farm and raise their family. They also were proprietors of Baker's Store. Anyone at the store or visiting Choate would come to the Baker's home for noon-time "dinner."
