2 artichokes
1/4 to 1/2 stick butter
3 green onions including tops, finely chopped
1/2 tsp. anise seed
Enough bread crumbs to bind
2 cloves garlic, pressed
1 small can smoked oysters, chopped very fine
1 tsp. cracked pepper
Salt (to taste)

Directions:
Place artichokes in boiling, salted water. Cook until the outer leaves pull away easily, about 45 minutes. Drain and cool.

Pick all the leaves from the stem and select 25 to 30 of the prettiest leaves and set aside. Discard choke. Remove the hearts and finely chop, placing them in a small bowl. Scrape the edible sections of the remaining leaves, using a teaspoon for scraping and add to the chopped hearts.

Put hearts and scrapings in a heavy skillet in which you have melted the butter, then add remaining ingredients. Salt to taste. Stir over medium heat until well-blended. Place about a teaspoon of mixture on each of the artichoke leaves that you set aside and place them on a cookie sheet.

Heat in a 350º oven when ready to serve.
