1 tablespoon oil
4 small boneless skinless chicken breast halves (1 lb.)
1 can (10 3/4 ounce) condensed cream of chicken soup
1 soup can of milk
2 cups fresh or thawed frozen broccoli florets
1 1/2 cups instant white rice, uncooked
3/4 cup shredded mozzarella cheese

Directions:
Directions:
Heat oil in large nonstick skillet on medium-high heat. Add chicken; cook 5 minutes one each side or until cooked through (165ºF). Remove chicken from skillet; cover to keep warm.

Add soup and milk to skillet; mix well. Bring to boil. Stir in broccoli and rice; top with chicken. Cover. Reduce heat to low.

Cook 5 minutes; sprinkle with cheese. Remove from heat. Let stand, covered, 5 minutes or until cheese is melted.
