1 head cauliflower
1 small butternut squash
1 cup shredded cheddar cheese

Cut cauliflower into floweretts and boil until tender (save water). Cut squash in 1/2; scoop out pulp/seeds; lightly coat cookie sheet with olive oil; lay squash cut side down onto sheet; cover with foil and bake for 30 minutes at 350º. Scrape out squash. Process cauliflower, squash, and cheese in batches in a large food processor adding saved water in needed.
