1 1/4 c. warm water
1 pkg. yeast
2 tsp. sugar
3 1/2 - 4 c. all purpose flour
coarse salt
1 1/2 tsp. salt
2 Tbsp. oil
1 egg, beaten
1 Tbsp. milk

Directions:
Preheat oven to 425º. Place 1/4 c. warm water in a large bowl and sprinkle with yeast and sugar. Stir to dissolve and let yeast proof until bubbly, about 5-10 minutes. Add remaining water, 3 1/2 c. flour, salt and oil. Stir to combine well. Turn dough out onto a lightly floured surface and knead until smooth and elastic, adding the remaining 1/2 c. flour to prevent sticking. Grease 2 heavy baking sheets with shortening. Divide dough into 24 pieces and roll into a thin strip 10 inches long. Shape into pretzels and place onto sheets. Cover pretzels with towels and let rise in a warm place until puffy (15 minutes). Lightly brush egg-milk glaze over pretzels and sprinkle with coarse salt. Bake 15-20 minutes until lightly colored
