Cheesy Potato Soup Recipe

1/2 cup diced carrots
1/4 cup of diced onion
1/2 cup of diced celery
3 cups of diced potatoes
1 teaspoon of parsley
1 cup of water
dash salt/pepper
1 chicken bouillon cube
2 tablespoons of flour
1 1/2 cups of milk
1/2 pound of cubed velveeta
4 slices of cooked chopped bacon
croutons (optional)

Combine the first 9 ingredients and simmer until veggies are tender. Blend milk and flour in a bowl and add to the vegetable. When the soup is thick, add the cheese and melt. Add bacon on top and serve with croutons on top if desired.
