1 cucumber, peeled and seeded, cut into large chunks
1 red pepper, seeded, cut into large chunks
2 c. V-8 juice
14 ounces diced tomatoes in juice
12 ounces fresh salsa
1 c. roasted red peppers from jar
1/2 c. fresh cilantro chopped
2 T. red wine vinegar

Garnish:
sour cream
avocado slices

Directions:
Chop cucumber and bell pepper in food processor.
Add 2 cups V-8 juice and remaining ingredients; blend to puree.
Season to taste with salt and pepper.
Cover and chill for 2 hours.
Serve in bowls and garnish with a dollop of sour cream and slice of avocado.
