2 lbs. hamburger
2 T. Tenderquick salt
1/2 t. garlic
1 c. water
1/2 t. old hickory
1/2 t. onion salt
1/2 t. pepper corns
1/2 t. mustard seed
May add a small amount of red pepper or chili powder and t. paprika for color.

Directions:

Mix together in a large bowl. Divide in half. Roll in heavy foil, twisting ends. Refrigerate 24 hours. Put water in bottom of broiler pan and lay loaves on broiler grill. Bake 1 hour in foil. Refrigerate 24 hours before slicing.
