1 1/4 cup whole-wheat flour,
¾ cup flour,
½ cup chopped pecans (optional: most of us don't like nuts in our pancakes),
2 tablespoons brown sugar,
2 teaspoons baking powder,
1 teaspoon baking soda,
Heaping ½ teaspoon cinnamon,
½ teaspoon ginger,
⅛ teaspoon cloves,
¼ teaspoon salt,
2 eggs,
1½ cups buttermilk,
1 cup pumpkin puree,
1 tablespoon applesauce or wonderslim (or butter),
4 firm pears,
2 T butter,
2 T brown sugar,
1/2 c apple juice
sprinkle of cinnamon

Directions:

In a large bowl, combine flours, pecans, brown sugar, baking powder, baking soda, cinnamon, ginger, cloves and salt; mix well. In a separate bowl, whisk together eggs, buttermilk, pumpkin puree and applesauce until smooth; add to flour mixture and stir until blended. Cook on pancake griddle.

In a separate skillet, melt butter and add pears, sugar, applejuice and cinnamon, cook until tender.

Serve pear sauce on pancakes.
