4 1/2 c. oats,
1/2 c. peanut butter,
1 T. vanilla,
2 1/2 c. evaporated cane juice,
2 T. cocoa powder,
1/2 c. soymilk,
1/2 c. ground white beans (from a can--I just empty the whole can into the blender and blend it, then measure out 1/2 cup--this replaces the butter in the recipe)

Combine in a bowl and set aside: oats, PB, and vanilla. In saucepan, combine remaining ingredients. Bring to a boil, stirring occasionally. Let it boil for 1 minute (use a timer), stirring constantly. Remove from heat and pour over the oat mixture. Scoop onto greased cookie sheet, and let cool. Cookies should 'set' fairly quickly, but it does take a little longer and set a little softer than your normal no bakes. I think they taste better!
