1 cup shortening
1 cup sugar
2 cups flour (not sifted)
1 tsp baking powder
1 tsp cream of tartar
1 tsp vanilla
1 tsp lemon juice
1 egg

Directions:
Directions:
Mix ingredients together.
Roll in balls and press lightly with a fork or bottom of glass dipped in sugar.
Bake at 350º. Remove from oven while still light and soft.

Eva and Bob Smith were dear friends of the Kittel famly. The cookies are a yummy alternative to traditional sugar cookies. The lemon flavor is very subtle. I roll the top of the cookie ball in red and green sugar and lightly flatten with the bottom of a glass, when I make these at Christmas time. A nice colorful addition to the Christmas cookie tray!
