2 English muffins
8 slices bacon
2 Large eggs
Dash Tobasco sauce
2 slices American cheese
1 t. mayonnaise
1 t. Dijon mustard
1 small onion, sliced

Directions:
Directions:
Cook bacon in a medium skillet over medium heat. Remove and drain on paper towels. In the same skillet, fry the eggs. (Punch a hole in the yolk, so some runs out--) Sprinkle some Tobasco sauce on the eggs and place a slice of cheese on each egg. Cover the frying pan, then turn off the heat and let the cheese melt. On half of an English muffin spread half the mayo and on the other half spread half the mustard. Now build your sandwich.

Pepper jack cheese is a good substitute for the
more mild cheese, if you like a "kick" to your sandwich--Dale highly endorses these!
