4 cups uncooked penne pasta
2 tbsp olive oil
4 cups very warm water
2 cups chicken stock
1 cup cream (half and half, cereal or whipping, depending on how creamy you like it)
2/3 cup grated Parmesan cheese
2/3 cup ricotta cheese
1 tsp dried basil
1 tsp garlic salt
pepper to taste
pinch of nutmeg
1/2 cup ricotta cheese

Directions:

1. In a bowl, mix the penne, olive oil and very warm water. Let stand for 30 minutes to soften the pasta.
2. Preheat oven to 425ºF
3. In another bowl, use a whisk to mix the stock, cream, Parmesan, 2/3 cup ricotta, basil, garlic salt, pepper and nutmeg.
4. Drain the pasta in a colander. Stir the pasta into the cream mixture. Pour the pasta and creamy liquid into the baking dish. Spread the pasta evenly.
5. Use a spoon to drop the 1/2 cup ricotta in small blobs onto the pasta. Don't stir. Cover the dish with its lid. Bake 45 minutes, until the sauce is bulbbling and the pasta is tender.
