1 onion peeled and chopped
4 cloves minced garlic
2 teaspoons olive oil
1 pound zucchini coarsely chopped
2 cups of chicken stock (15 oz can)
1 14oz can of coconut milk
1 tablespoon curry powder
salt and white pepper

Directions:
Directions:
In a 4-5 quart pan over medium heat, stir onion and garlic in oil until soft, about 8 minutes.
Add zucchini and 1 cup chicken broth, simmer until zucchini is tender, about 10 minutes.
Transfer mixture to a blender, whirl until smooth.
Return to pan. Stir in remaining chicken broth, the coconut milk, curry powder, and salt and pepper to taste. Sir until hot.

Great way to use up zucchini's from the garden.
Prep and cook time: about 30 minute's
Makes 5 cups, 3-4 servings. and only 137 calories per serving.
