1 1/2 cups natural bran
1 1/2 cup sugar
2 Tsp baking soda
1/2 Tsp salt
14 oz can of pumpkin
1 cup vegetable oil
1 1/2 cup whole wheat flour
3 Tsp cinnamon
2 Tsp baking powder
1/2 cup raisins (optional)
4 eggs (unbeaten)
1 cup plain yogurt
*healthier version - cut by 1 egg and oil by half

Directions:
Directions:
In a large bowl combine dry ingredients and raisins.
In a separate bowl, combine pumpkin, eggs, oil and yogurt.
Mix and then add to dry mixture. Stir just until combined. Spoon batter into paper lined muffin tins.

Bake at 350F for 25 minutes or until firm to the touch.

Makes 24 muffins.

If made more than 2 days ahead, muffins should be frozen - as they get too moist.
