1 cup butter, room temperature
1 cup white sugar
1/2 cup brown sugar
1 egg
1Tsp vanilla
1 1/2 cup flour
1/2 Tsp cinnamon
1 Tsp baking soda
1 Tsp baking powder
1 1/2 cups rolled oats
3/4 cup coconut

*1 cup white chocolate chunks
*1 cup dried cranberries, blueberries
or
*1 cup dark chocolate chunks
*1 cup dried cherries

Directions:
Directions:
Preheat oven to 350ºF.
Line 2 cookie sheets with parchment paper
Cream the butter with both sugars until light and fluffy
Add egg and vanilla and mix to combine
Sift together flour, cinnamon, baking soda and baking powder, and beat into the butter mixture
Stir in the oats, coconut, chocolate and your chosen combination of the fruit
Drop by spoonful onto prepared pan

Bake for about 12 minutes.
(Do not over bake because they are meant to be chewy)
Cool on a rack and store in a cookie tin
