6 clean white pigs feet
1 bunch parsley, cut in 4 pieces
3 stalks celery, cut in halves
4 garlic cloves, chopped
Ground and whole black pepper
1/2 tsp. red paprika
Salt to taste

Directions:
Directions:
1. Wash feet thoroughly with brush, put in a large pot and fill with cold water to the top; bring to a boil. Skim the foam off the top with a spoon. Add all ingredients and cook slowly for 5-6 hours, or until the water is down to half. Cool.

2. Separate bones from meat. Put in Pyrex or shallow dish. Strain the soup; press little bit of parsley and celery with a spoon through the strainer and mix it well. Let cool in refrigerator overnight. Next day, scrape the grease. Cut into small squares and if desired, squeeze lemon juice on top. Serve cold.
