1/4 cup chopped onion
1/4 cup butter or margarine
1/4 cup all-purpose flour
2 1/2 cups milk
5 large potatoes, peeled and thinly sliced (5 cups)

Directions:
Directions:
Cook onion in butter or margarine till tender. Stir in flour and 1 teaspoon of salt and 1/8 teaspoon pepper, and 3/4 cup shredded American cheese and stir until sauce is smooth. Cook and stir 1 or 2 minutes more. Remove from heat. Place half of the sliced potatoes in a greased 2 quart casserole. Cover with half of the sauce. Repeat layers. ( I sprinkle shredded cheddar cheese on the top.) Bake for about 30 minutes in a 350 oven. Makes 4 to 6 servings.

I am sending the recipe that I once used until I discovered that I was assured that no raw potatoes lurked in the finished product if I boiled the sliced potatoes until they were almost done before I did the layering thing. Now I use the same recipe with that slight change!
