1 onion, chopped
1 T. butter
1 lb. ground beef
1 T. tomato paste
2 T. parsley
Salt and pepper
1 cup water
1 large eggplant
4 medium zucchini
1 large potato
˝ cup bread crumbs
1/8 cup Parmesan cheese
8 T. margarine
12-13 T. flour
4-5 cups milk
3-4 egg yolks

Directions:
Directions:
Saute onion in butter; then add ground beef and cook until browned. Add tomato paste, parley, s&p, and water; then simmer for 30 minutes. Slice eggplant, zucchini, and potato after washing. Saute vegetables in oil until browned. Add bread crumbs and Parmesan to the meat mixture. Butter a 10x15 baking pan and sprinkle with bread crumbs. Layer vegetables/meat/vegetables/meat. Make Béchamel Sauce by melting the margarine; then adding the flour. Stir and add the milk until thick. Do not boil! Beat egg yolks and trickle into the cooking mixture. Pour sauce on top of the pan layers; then sprinkle with bread crumbs and Parmesan cheese. Bake at 350-375 degrees for one hour.
