3 ½ T. butter
4 T. flour
1 ½ cups milk
5 egg whites
5 egg yolks
Pinch of salt
1/8 t. cream of tartar
1 cup grated cheese (Swiss & Parmesan, or Cheddar, or Roquefort)
1 t. prepared mustard
Pinch of nutmeg
Dash of cayenne pepper

Directions:

Prepare an 8 cup ramekin with buttered sides. Preheat oven to 400 degrees. Melt butter and add flour. Stir in the milk gradually stirring smooth. Remove the pan from the heat and add egg yolks one at a time. Stir in the cheese, mustard, nutmeg, and pepper. Add a pinch of salt and cream of tartar to the egg whites and beat until stiff. Fold the cheese mixture into the egg whites and transfer to the soufflé dish. Turn heat down to 375 degrees and place the soufflé in the oven immediately. Bake for 25 minutes and serve immediately with a great salad and crunchy bread!
