2 lbs. chopped spinach
1 bunch green onions, chopped
1 lb. Feta cheese, crumbled
8 eggs
1 1/2 c. butter, melted
1 lb. Phyllo dough
Salt, pepper, paprika

Directions:
Directions:
1. Wash spinach & chop well (or you may use 2 packages of frozen, chopped spinach). Drain well.

2. In large mixing bowl, beat 8 eggs. Brown green onions in butter and add to eggs. Add chopped feta cheese. Add salt, pepper & paprika & mix well.

3. In a deep cookie sheet, place 8 to 10 sheets of Phyllo with butter sprinkled in-between each sheet. Add ½ of the egg/spinach mixture and spread evenly on the Phyllo. Add another 4 to 5 sheets of Phyllow with butter sprinkled between each. Add remaining egg/spinach mixture. Add the remaining sheets of Phyllo dough (about 6) with sprinkled butter between each.

4. Cut through the top layers of Phyllo in squares. Place in a 350ºF oven for approximately 45 minutes and browned on top. After Spanoko Pita has cooled, cut through the layers to the bottom of pan.
