1 1/2 c. butter
2 c. yellow corn meal
4 eggs
3 c. milk
2 1/2 c. Ricotta cheese (or small curd cottage cheese)
2 tsp. baking powder
1 large onion, chopped
1 c. cream
1 c. half and half
6 oz. cream cheese

Directions:
Directions:
1. Saute onion in 1/2 c. butter. In a large bowl, combine onion, eggs, milk, corn meal and baking powder. Add cheese and mix well. The batter should be thick.

2. Coat 9x13 inch baking dish with 1/2 c. melted butter. Pour in corn meal mixture and bake at 450ºF for about 20-30 minutes.

3. Meanwhile, place remaining butter, cream, half and half, and cream cheese in top of double boiler and melt over medium heat while stirring.

4. When corn bread is lightly browned, remove from oven and quickly cut into serving size pieces. Do not remove from the pan. Evenly pour the cream mixture over the corn bread. Return to oven and continue baking until cream mixture is absorbed and bread is browned. May be served hot or cold.
