3 c. water
1 c. yellow corn meal
1/2 tsp. salt

Directions:
Directions:
1. Boil together 2 c. water and 1/2 tsp. salt. Add 1 c. cold water to 1 c. yellow corn meal. Add the corn meal mixture to the boiling water, stirring with wooden spoon. Keep stirring.

2. Lower heat and stir occasionally; cook for 1/2 hour longer. (Add more polenta if a thicker or drier polenta is desired).

3. Spoon cooked corn meal on a platter and put sour cream on top. Or, it may be served cubed and with fried bacon sprinkled over the top.
