2 lb. zucchini
2 tsp. salt
1 c. Cheddar cheese, grated
1/2 c. cottage cheese
4 eggs, beaten
3/4 c. bread crumbs
3 Tbsp. parsley, chopped
3 Tbsp. butter
1/2 tsp. pepper

Directions:
Directions:
1. Wash and grate zucchini; add 2 tsp. salt. Set aside for 30 minutes. Squeeze all liquid out.

2. Mix the grated cheese and cottage cheese. Add zucchini, eggs, bread crumbs, parsley, and pepper. Pour into buttered baking dish and dot with butter. Bake at 350F for 40-45 minutes.
