1 3/4 cups All purpose flour
3 teaspoon Baking Powder
1/2 teaspoon Salt

1/4 cup Butter or margarine
1/2 cup sugar
1 Egg
3/4 cup Milk
1 teaspoon Vanilla

1 cup Blueberries, fresh or frozen
1 tablespoon All purpose flour

Directions:
Directions:
Mix the first 3 ingredients thoroughly. Make a well in the center.

In another bowl cream butter and sugar. Beat in egg until quite smooth. Mix in milk and vanilla. Pour into well. Stir just to moisten. Batter will be lumpy.

Stir blueberries with flour lightly. Fold into batter. Fill greased muffin cups 3/4 full. Bake in 400ºF oven for 25 minutes until lightly browned. Makes 16 muffins.

Alternative:
Blueberry Apple Muffins:
Cut blueberries to 1/2 cup. Add 1/2 cup of dice unpeeled apple. Add 1/2 teaspoon cinnamon. Proceed as directed.
