1/2 c. unsalted butter, softened
1/2 c. vegetable oil
1 3/4 c. sugar
2 tbsp. cake enhancer (optional)
2 tsp. apple pie spice
1 tsp. salt
2 tsp. baking powder
4 large eggs
3 c. unbleached all-purpose flour
1/2 c. applesauce
3 c. peeled and cored apples, cut into 1/2 inch chunks
2 c. chopped walnuts
1/4 c. sugar
2 tbsp. rum or brandy

Preheat oven to 350º. Grease 10 to 15 cup tube pan. Beat together the butter, oil, sugar, cake enhancer, spice, salt, and baking powder until light and fluffy, about 4 to 5 minutes. Add eggs one at a time, beating after each addition until batter looks fluffy. Scrape the bottom and sides of the bowl.

Beat in half the flour, add half the applesauce. Scrape bottom and sides. Add the remaining flour and applesauce beat together well. Fold in apple chunks and nuts. Spoon batter into prepared pan. Bake for 55 to 65 minutes, until cake tester comes out clean. Cool for 10 minutes before turning out of pan.

Make the glaze by stirring together the 1/4 cup of sugar and the 2 tablespoons of rum or brandy in a small saucepan over low heat until sugar dissolves. Brush on warm cake. Allow cake to cool completely before slicing.

Serve with caramel sauce.
