4 med. garlic cloves
Salt to taste
2 egg yolks
1 c. extra-virgin olive oil
1 1/2 T. lemon juice

Peel and mince garlic.
Using flat side of a large knife, crush garlic.
Place in a small mortar and pestle and add 1/2 t. salt and smash into paste. Or use a good garlic press that peels and mashes the garlic in one step.
Put egg yolks into small mixing bowl. Transfer garlic paste to bowl and whisk to blend. With a hand mixer on slow speed, slowly pour in olive oil in a very thin, steady stream until a creamy sauce forms. Must do this very, very slowly and steadily.
Add lemon juice slowly and ensure smoothness.
