1 lb white pea beans
1 quart cold water
1/2 tbsp salt
1/2 tsp prepared mustard
1/4 cup mild flavoured molasses
pinch pepper
1 sm-med onion, sliced
1/4 lb sliced bacon
2 tsp cider vinegar
1 tbsp brown sugar
1/2 cup ketchup
hot water as needed

Directions:
Directions:
Rinse beans. Add 1 quart water cover, heat to boiling, simmer 30 minutes. Drain, keeping liquid. Place onion slices in bottom of 6 cup casserole dish. Mix season, turn into pot. Add beans and liquid or water to cover. Arrange bacon on top. Cover and bake at 250º for 7 hours. At 4 hour point, remove 1 cup beans, mash, then stir back in without disturbing bacon. Cover and continue baking. Add liquid several times to keep beans just covered. One hour before serving remove cover to allow bacon to brown.
