6 ears fresh corn cut from ears
1/2 medium tomato, diced
1. yellow onion, diced
1/4 medium bell pepper diced
1 T. vegetable oil
1/2 tsp. black pepper
1 tsp Tony Chachere's Seasoning
Chicken stock as needed
Butter as needed

Directions:
Directions:
Saute veggies in the oil. Season to taste.
If the tomatoes and corn do not have enough liquid to saute for 30 min., you can add chicken stock.
Simmer for 1 hour. Same as above with the stock.
In the end, turn the heat up a bit, and brown the corn mixture.
Then I add 2 -3 T. butter, turn off the heat, put a lid on and let it sit for a few minutes
